OUR HISTORY
Epicerie EPICURE is a young business that opened on 17 September 2021 in the heart of Troyes city centre.
It all began almost a year ago, when the idea emerged of offering the people of Troyes a place where they could find original, quality products.

This period was marked by numerous encounters in the terroirs of France, a constant search for new products and unforgettable tastings.
We then moved into commercial premises on rue Georges Clemenceau in Troyes, on the axis between the Town Hall and the Cathedral, a stone's throw from the Halles covered market and the Prefecture. My wife, an architect, designed a place that was both warm and contemporary.
Our aim is to work exclusively with French and local producers, who have expertise that goes back hundreds of years and a strong history. We work without intermediaries, in complete independence, and the selection of our offer meets several criteria.
First of all, from an economic point of view, we want to promote French companies that use traditional, non-industrial methods, while guaranteeing support for French jobs.
It's important to us to choose our partners according to environmental criteria, always using sustainable and sometimes organic farming methods. In this respect, all our packaging is recycled and recyclable.

OUR HISTORY
Founded in 1969 by Daniel THIERRY, Maison THIERRY is located in Sainte Savine, near Troyes. Our company perpetuates the tradition of traditional charcuterie, particularly that of the andouillette de Troyes.
In 1987, the arrival of his son Christophe brought new blood to the business and he continued to make his specialities, where a team of qualified staff worked hard every day to satisfy customers looking for home-made, traditional products.

Our andouillette is made in the purest traditional way. It is made entirely by hand.

Thanks to an artisanal production method jealously preserved in the purest Trojan tradition, Maison THIERRY has been awarded the AAAAA diploma by the Association Amicale des Amateurs d'Andouillette Authentique (renewed every two years since 1996), which rewards the best andouillettes in the region.
The Association brings together professionals from the world of food and dining (food critics and columnists, restaurateurs, gourmets, manufacturers and journalists).

Its president Jacques Louis Delpal, vice-president Vincent Ferniot and the whole team are dedicated to honouring the Andouillette.
The andouillettes are then immersed in a court-bouillon for over 6 hours, accompanied by onions and aromatic herbs.
